I actually made the recipe for the cream (the star) for this salad about 6 years ago and have tweaked it a bit over the years. I am now ready to introduce my Creamy Fruit (and jelly) salad. I personally think its rather pleasing. Creamy, a little sweet and tangy. Bursts of fresh apple, jelly and coconut fiber. There is a little longan in there too. I garnish it with strawberries if I can find really really really nice juicy gorgeous red ones, but if not available, I sometimes garnish with grapes and sometimes kiwis. All depends on what is the freshest nicest yummiest fruit available.
