With no kind of specific training in cooking/baking, we have relied on cookbooks and experimenting, some resulting in really really really yummy dishes, and some rather disastrous ones.

VANILLA VANIlLA CUPCAKES
They're light, not too sweet, and I LOOOOVVVEE them. The icing is delicate and buttery. Definitely worth a try. The vanilla icing can be made in different colors to suite your mood/need.
